Here, French gastronomy is modernised and elevated through new seasonal creations personally curated by Chef Yannick Alléno himself, including the Experience Menu, White Truffle Menu, and Le Déjeuner.

The Tasting Menus – A Journey of Culinary Mastery

A symphony of French flavours unfolds with the Experience Menu, a six-course journey through Alléno’s most celebrated creations. The menu features sumptuous dishes such as La Balade, an impossibly intricate composition of seasonal vegetables; Sea Urchin paired with lobster coral and tomato foam; and Langoustine Tarte accented by ginger beurre blanc and Prunier caviar. The indulgence continues with Turbot delicately paired with shiso, basil, and citrus sauce, and Wagyu Beef Mille-Feuille layered with foie gras, salsify, and beef jus. The experience concludes with Figs with sfogliatelle and vanilla, followed by Natsuc Meringue, a refined fusion of dark chocolate and cacao foam.

The culinary odyssey continues with another luxurious tasting experience, the White Truffle Menu, where each dish is delicately elevated with the depth and aroma of this noble ingredient, allowing guests to explore its many dimensions through creative interpretations. The journey begins with Celery Royale served with Albuféra sauce, followed by Anelli Timbale featuring tender langoustine brouillade and delicate parmesan emulsion. John Dory is complemented by vanilla and coconut mousseline, while Bresse Chicken is enriched with stalk celery, jus, and lovage oil. The menu concludes with Pear, presented with brunoise, sorbet, and mousse, and the exquisite Merveilleux, an indulgent creation of coffee, mucilage sorbet, and smoked chestnut.

Le Déjeuner – Refined Simplicity for Daytime Dining

A midday symphony of French flavours, Le Déjeuner presents a refined three-course experience highlighting Caviar with Prunier Oscietra Supérieur and Kaviari Beluga Huso, La Balade of seasonal vegetables, Cheese Soufflé with 24-month comté, and Sea Urchin with lobster coral and tomato foam.

Main courses include Sylvestre Mushrooms with porcini consommé, Turbot enhanced by shiso and citrus, Bresse Chicken with stalk celery and lovage oil, and Wagyu Beef Mille-Feuille layered with foie gras and salsify. To conclude on a sweet note, desserts feature Figs roasted with sfogliatelle and vanilla, the indulgent Merveilleux infused with coffee buttercream, cacao, and meringue, and the exquisite Natsuc Meringue accompanied by dark chocolate and cacao foam.
