Dubai, UAE- Last evening, I had the pleasure of dining at The Permit Room, and what unfolded was not just a dinner, but a beautifully curated experience of authentic Indian flavors wrapped in warm hospitality.
From the very first step inside, the ambience sets the tone. The décor is stylish yet warm, contemporary yet deeply rooted in Indian culture. Soft lighting, tasteful interiors, and an inviting atmosphere make you feel instantly comfortable — whether you’re dining with family, friends, or colleagues. It has that rare quality of feeling both vibrant and intimate at the same time. Seating in the open air is available for those who prefer it.
Before I even begin speaking about the food, I must acknowledge the hospitality. The staff at The Permit Room are exceptionally well-trained and genuinely courteous. They were attentive, checking on the table every few minutes with warmth and professionalism. Every request was handled promptly, every dish explained patiently. It is this level of care that transforms a simple dinner into a memorable experience. In many ways, this restaurant truly feels like a jewel in Dubai’s hospitality industry.

My Selection for the Evening: I began my meal with the Murg Malai Tikka, and it immediately set high expectations for the evening. The chicken was unbelievably tender, marinated in a rich, creamy blend that carried delicate spices. Perfectly grilled, it had a subtle smokiness that enhanced the flavor beautifully. Each bite was soft, juicy, and comforting — a dish that speaks of balance and finesse. The Garden Salad was fresh, vibrant, and crisp — a light and refreshing contrast to the richness of the starters. Sometimes simplicity is key, and this salad delivered exactly what it promised: freshness and balance.
The highlight of the evening was undoubtedly the Cooker Rogan Josh, served in an actual pressure cooker — a presentation that immediately captures attention. But beyond the presentation, the flavours were deeply satisfying. The mutton was slow-cooked to perfection, tender and infused with aromatic spices that reflected authentic Indian tradition. The gravy was rich, layered, and comforting — the kind that reminds you of slow Sunday meals at home specially made by mothers, yet elevated with restaurant finesse.

Paired with the Rogan Josh was the Ajwain Laccha Parathas — beautifully flaky, layered, and fragrant. The subtle aroma of ajwain (carom seeds) added depth and character, making it the perfect companion to the robust curry. The Dal Makhani deserves special praise. It was the creamiest, softest and most delicious I have ever tasted. The texture was smooth and silky, showing the care and time taken to prepare it. It was rich but not too heavy, full of flavour— true comfort food at its best.
What truly impressed me is the sheer variety and creativity on the menu. The Permit Room doesn’t just serve Indian food — it reimagines it.
Their chaat selection looked extraordinary, featuring unique creations like Mercedes Chaat, Burrata Chaat, and Amritsari Truffle Kulcha — dishes that blend tradition with innovation. For lovers of bold flavours, options like Calcutta Chilli Chicken, Bhuna Murg Khaari, Achari Rogan, and Taksali Paneer Tikka promise an explosion of taste.
This is the kind of menu that can make any foodie curious, excited, and eager to return for more.
One of the most beautiful aspects of The Permit Room is its universal appeal. People of all nationalities can come here and enjoy authentic Indian cuisine in a welcoming and relaxed environment. The restaurant also offers beverages that perfectly complement the food, enhancing the overall dining experience.
